Description of the Festival
The scottiglia is a typical peasant dish made of stale bread seasoned with veal, pork, chicken, turkey, rabbit, lamb, only optionally lamb. The shape is typical of a soup of mixed meats, dark red in color, with a strong and structured flavor and pleasant fragrance. The festival is an excellent opportunity to learn and not forget the flavors of the traditional rural cuisine of Casentino.
SCOTTIGLIA: to obtain an excellent result it is a prescription to use meat of different qualities, for example: muscle of veal, rabbit, duck, chicken, and pigeon, lean pork, turkey and goose with the caution to degrease the sauce. In each pan and it takes many depending on the different qualities of meat, place a mixture of onion, garlic, celery and carrot rib: all in small quantities because it is the flavor of the meat that must emerge. Cut the meat into large pieces and remove part of the bones: brown it together with the beat, taking care that it does not take too much color, pour into the saucepan half a glass of wine and let it evaporate over a high flame. The wine must be excellent, dry, black and of good gradation. Then add tomato paste, diluted in broth of bones, according to a shaved spoon in a pan, salt and whole pepper, you can add a leaf of sage, rosemary and very few spices: two cloves, a walnut flaw moscata and the scent of cinnamon queen.
