Description of the Festival
The brown trout is a native salmonid of our mountain waters. The brown trout has excellent, firm and delicate, white or pink flesh. Since ancient times the trout has been much appreciated in gastronomy, it can be a great appetizer if marinated, or an interesting second if boiled or roasted. The first edition of the trout festival dates back to 1968. The day has always been divided into fishing competitions in the Ciuffenna stream and in the traditional trout grilled.
TROUT TO GRILL: Clean the trout through the gills, wash it under running water and dry it carefully; add salt, pepper and brush with oil. Place the washed and dried herbs, the peppercorns, and a finely chopped garlic clove into the abdominal cavity. Put the trout on the grill and cook it on the grill for 20-25 minutes. The prepared trout is tasty and keeps its delicate pulp intact. Serve it simply with slices of white bread and a good quality white wine.
