Description of the Festival
For centuries the chestnuts constituted the food base of the Casentino mountain and consequently the chestnut cultivation and the castagnatura were central operations in the annual cycle. Survival was guaranteed by this fruit. La Castagnata Stiana, a journey through the gastronomy and the culture of the Casentino mountain. La Castagnata is a festival dedicated to the Queen of Autumn, which in the past was the main source of livelihood for the people of Casentino.
THE BURNERS: To prepare the burnt you choose large brown and "castrano" practicing them a 'ventral incision to prevent the increase of gas, caused by heat, make them "burst" and place themselves in the pan which then rests on embers of the hearth. The "brici" are cooked when the skin tends to detach and the pulp yields to the pressure of the fingers. Then put them in a saucepan, sprinkle them with local wine, cover them with a cloth, let them stew for a few minutes and taste them still boiling.
