Description of the Festival
Chestnuts have been the food base of the Casentino mountain for centuries and as a consequence chestnut cultivation and chestnut making were central operations in the annual cycle. Survival was guaranteed by this fruit. In the center of the village, large wood-burning braziers are lit where the tasty chestnuts of the area are roasted. The booths are also offered boiled chestnuts (ballotti) as well as many local products such as honey and pecorino, all accompanied by excellent new wine: early autumn flavor, character advance and colors of the new harvest.
THE CUTS: The chestnuts should be "cleaned", that is to remove the peel leaving instead the "skin" Of course to get good cut it is necessary to use the chestnuts whose "sansa" is very little tannic, and therefore maintain a pleasant sweet taste.
