Description of the Festival
The Festival of Bringoli and San Martino is a very busy and attended annual event, a good opportunity to taste the products of our tradition. The Bringoli are the classic spaghettoni only water and flour handmade by housewives of the country and seasoned with mushroom sauce or meat or traditional fake sauce.
BRINGOLI AL SUGO FINTO: The original recipe for the preparation of the bringoli is with flour, warm water and salt. Pull the dough and adjust it with more or less water or more or less flour, it is ready when the whole is homogeneous and rather solid "otherwise the bringoli do not lie down because the pasta goes back like the rubber bands". From the dough obtained, then pieces are broken off, which are worked with the hands on the pastry board, extending them until they have rudimentary spaghetti that are left to rest in a tray sprinkled with flour before being cooked in boiling salted water like any other pasta. They are traditionally seasoned with the fake sauce, the ingredients: they are half onion, a carrot, a stalk of celery and a handful of small tomatoes, the round ones a little elongated and bunches called perines. The tomatoes should be blanched in hot water, peeled and squeezed to remove the seeds and added to the sautéed mixture with good oil and all the ingredients cut into pieces a little 'coarse. It is adjusted with salt and pepper, a little 'of chili and is perfumed with basil leaves. The fake sauce is ready in a few minutes.
