Description of the party
For centuries the chestnuts constituted the food base of the Casentino mountain and consequently the chestnut cultivation and the castagnatura were central operations in the annual cycle. Survival was guaranteed by this fruit. The "Castagnatura" was a period of about two and a half months that began in October. The Festival of Castagnatura is the historical re-enactment linked to the product that for centuries has been linked (and still is today) to the economy of the place: the chestnut.
During the two days of celebration there will be cultural, theater and practical demonstrations (beginning of drying of chestnuts, milling of flour, etc.). The Chestnut Museum and a functioning squeegee can be visited.
BALDINO: Take the "unshelled" chestnut flour and dissolve it in cold water, taking care that the lumps are not formed, add two tablespoons of oil, a strand of "ramerino", a pinch of salt, some pine nuts and walnut kernels . It is important that the flour is very liquid and that put in the dough form a thickness of no more than half a centimeter. Cook the baldino for a long time over moderate heat. It is cooked when the surface is completely cracked.
